IMMUNE-BOOSTING BROCCOLI SOUP

INGREDIENTS

  • 1 tablespoon organic, virgin olive oil

  • 1-2 chopped onions

  • 4 stalks chopped celery

  • 2 to 4 minced garlic cloves 

  • 3-4 sprigs of fresh thyme and parsley

  • 1 tbsp of diced or grated ginger

  • 1 full head of broccoli, chopped

  • 1-3 decent-sized white yams or sweet potatoes, potatoes or parsnips, (or a mix of all) peeled and diced

  • 1 box low sodium vegetable stock or fresh, homemade veggie stock

  • Pinch or two of Maldon Sea Salt or Himalayan Salt to taste 

  • 1-2 cups organic spinach leaves 

  • 2 tbsp chopped fresh herbs, such as parsley, tarragon, sage, or mint for garnish

METHOD

  1. Saute chopped onions and celery until lightly caramelized (3-5 minutes)

  2. Add in garlic cloves + fresh thyme, and parsley & cook for another 1-2 minutes 

  3. Add in chopped broccoli, yams, potatoes or parsnips + 1 box of low sodium veggie broth or 4 cups of homemade broth

  4. Bring to a boil & then simmer for 12-15 minutes or until tender

  5. Add salt, let cool just slightly, then add to a high-speed blender & blend until fully combined 

  6. Garnish with fresh herbs & enjoy!

Optional add-ins: 1tbsp of freshly grated ginger, a squeeze of fresh lemon juice, additional herbs of choice, microgreens or sprouts, nutritional yeast, a drizzle of olive oil or cashew creme, sea salt & pepper
