SPROUTED GRAIN SALAD + SWEET POTATO & RADICCHIO

Ingredients

(Serves 4)

• 1 head of radicchio (or preferred lettuce or cabbage)

• 1 sweet potato chopped, steamed, or baked and then cooled

• 1/2 cup chick peas *optional

• 1/2 cup crumbled cashew cheese *optional

• 1/4 cup fresh basil

• 1/4 cup fresh cilantro (or micro greens)

• 1 cup sun-dried bojita olives or olives of choice (sub 1/4 cup capers)

• 1 cup sprouted brown rice, cooked & cooled *or quinoa

METHOD

1) Cook Rice & cool

2) Steam or bake sweet potato & cool

3) Cook and cool chickpeas

4) Chop radicchio into small pieces

5) Make cashew cheese or use crumbled cheese of choice

6) Chop herbs

7) Toss everything together in a large bowl

8) Serve with Apple cider Vinegar Vinaigrette

 

+ APPLE CIDER VINAIGRETTE

Ingredients (Serves 6)

• 1 cup organic virgin olive oil

• 2 tablespoon apple cider vinegar

• 1 tbsp. organic raw honey

• 1/2 lemon (or more)

• Dash or two of sea salt to taste
