CHEF JAMIE'S LIVER CLEANSING GREEN SMOOTHIE

LIVER CLEANSING GREEN SMOOTHIE
Serves 5

INGREDIENTS // 
2 Young Coconuts, Opened with Coconut Water and Coconut Meat Reserved, Shells Composted
1 Papaya, with Seeds and Skin Removed and Composted
2 Limes, Juiced
1 Blood Orange, Juiced
1 Lemongrass Stalk
1 Bunch Parsley, Blanched and Shocked, Stems Removed and Composted
1 Bunch Dandelion Greens, Blanched and Shocked, Stems Removed and Composted
4 Ice Cubes

EQUIPMENT: 
-Blender
-Chef Knife
-Cutting board
-Coco Jack (for opening coconut)
-Spoon (for removing coconut meat and scraping out papaya meat and seeds)
-Sauce Pot
-Citrus Squeezer 

METHOD // 

With the back of a knife, beat the lemongrass until it splits and starts to fray. Steep in 1/2 cup purified water a medium simmer and half of the water has evaporated. Remove and compost the lemongrass and add steeped liquid into the blender. 

Vertically quarter the Papaya with the Chef knife and use the spoon to first scrape and remove the seeds, then scrape out the papaya meat and compost the seeds and skin. Place the meat into the blender. 

The Coco Jack is certainly the safest tool to open coconuts, but I've found that a meat cleaver is also effective, just as long as great caution is implemented or chain mail gloves are worn. Remove meat and water from coconuts and compost shells. Add water and meat into the blender. 

Bring to boil a medium pot of purified water. Meanwhile, roughly cut the leaves off of the bunches of dandelion greens and parsley, compost stems, and blanch the leaves in the boiling water for about 30 seconds. I like to blanch the leaves because it removes some of the bitterness. Shock the leaves in some cool running water and place into the blender. If you like, you can drink the remaining liquid as a tea. 

Squeeze the juice of the limes and blood orange, compost peels, and pour the juice into the blender.

Put ice in blender, blend until smooth and serve!
